Rice Cooker Savory Cake (Cake Salé)

“Cake Salé” is the French term for a savory cake.
It’s a kind of “side-dish cake” baked with vegetables, ham, and other ingredients. Unlike sweet cakes, it has a well-balanced nutrition, making it a great choice for lunch, a snack, or even a late-night meal. Try using seasonal vegetables and enjoy a variety of flavors!

Ingredients

≪Ingredients≫ For one large rice cooker (about 1.8 liters / 10 cups capacity)
Makes one cake in a large (10-cup) rice cooker
Barley flour (mochimugi flour) 1 cup (about 120g)
All-purpose flour 1/4 cup (about 30g)
Baking powder 1 tsp (about 4g)
Baking soda 1 tsp (about 4g)
Eggs 3
Milk 100 ml (about 1/2 cup)
Olive oil (or vegetable oil) 50 ml (about 3 1/2 Tbsp)
Cheese (any type, chopped) 70 g (about 2/3 cup)
Onion 1/2 (about 100 g)
Broccoli 1/2 (about 100 g florets)
Carrot 40 g (about 1/3 medium carrot)
Potato 1 (about 150 g)
Bacon 3 slices

Instructions

  1. Prepare the dry ingredients.
    In a bowl, sift together the barley flour, all-purpose flour, baking powder, and baking soda.
  2. Prepare the broccoli.
    Cut the broccoli into small florets and microwave for about 3 minutes until slightly tender.
  3. Prepare the other vegetables and bacon.
    ・Cut the bacon into thin strips.
    ・Roughly chop the onion, carrot, and potato.
    ・Lightly sauté them in a frying pan until softened.
  4. Mix the wet ingredients.
    In a large mixing bowl, beat the eggs. Add milk, olive oil, and chopped cheese, then stir well.
  5. Combine the fillings.
    Add the broccoli, bacon, and sautéed vegetables into the egg mixture. Season lightly with salt and pepper, and mix gently.
  6. Add the flour mixture.
    Gently fold the dry ingredients into the mixture until just combined. (Do not overmix.)
  7. Cook in the rice cooker.
    Lightly grease the inner pot of your rice cooker with oil. Pour in the batter, spread evenly, and start the regular cooking cycle.
  8. Check doneness.
    If the surface still looks wet after cooking, carefully flip the cake and cook again for about 5 minutes.
