Mochimugi Tofu Donuts

Made with mochi barley flour, which is rich in soluble dietary fiber, these are healthy little treats!
With tofu added, you can enjoy two different flavors in these cute mini donuts.

Ingredients

Silken tofu 50 g (about 1.8 oz)
Mochimugi flour 50 g (about 1/2 cup)
All-purpose flour 50 g (about 1/2 cup)
Baking powder 1 tsp
Egg 1 large
Soy milk 2 tbsp (30 ml)
Brown sugar 2 tbsp (25 g)
Black sesame seeds 5 g (about 1 tsp)
Finely chopped orange peel 20 g (about 2 tbsp)
Vegetable oil, kinako (roasted soybean flour), powdered sugar as needed for frying and dusting

Instructions

  1. Prepare the tofu.
    Place the silken tofu in a bowl (no need to drain). Mash with a whisk until smooth.
  2. Mix wet and dry ingredients.
    Add the egg, soy milk, and brown sugar to the tofu and mix well. Sift in the flours and baking powder, then combine until smooth.
  3. Divide and add flavors.
    Divide the batter in half. Mix black sesame seeds into one half and chopped orange peel into the other half. Mix each well.
  4. Fry the donuts.
    Heat vegetable oil in a pan. Drop spoonfuls of batter into the hot oil and fry until golden brown. Remove and drain on paper towels.
  5. Add toppings.
    Once slightly cooled, dust the black sesame donuts with kinako and the orange peel donuts with powdered sugar using a fine sieve.
