Mochi-Puchi Rice Croquettes
Enjoy a no-fry rice croquette made with mochimugi rice! You can mix in tuna, ham, mushrooms, corn, or other vegetables—get creative!

| ≪Ingredients≫ | Serves approx. 15 pieces | 
| Rice | 200 g | 
| Mochimugi (Pearl Barley) | 60 g | 
| Water | Amount for 2 cups of rice | 
| Bacon | 60 g | 
| Onion | 1/2 | 
| Butter | 15 g | 
| Consommé cube | 1 | 
| Soy sauce | 1 tbsp | 
| Bread crumbs (for coating) | 40 g | 
| Processed cheese | As desired | 
Instructions

Wash the rice and add it with mochimugi and water to a rice cooker. Soak for about 30 minutes.

Cut bacon into 1 cm strips. Finely chop the onion and heat in the microwave for 1 minute.
 - 
Add soy sauce and finely crumbled consommé cube to the soaked rice, mix well, then top with the bacon and onion from step 2 and start cooking.
 - 
Toast the bread crumbs in a pan until lightly browned.
 - 
Once the rice is cooked, mix well. Take about 50 g of rice, wrap it around the chopped processed cheese, coat with toasted bread crumbs, and it’s ready to serve.
